Moist Italian Meatballs





Who's tired of hearing about winter storms?  I am.  I'm tired of hearing about them; I'm tired of talking about them; but mostly, I'm tired of living in the midst of them (Spring, oh Spring, come quickly... sigh).

So, I'll just share this...



That's my deck and outdoor table and chairs buried under three feet of snow (Please dismiss the tacky fencing nailed to the railing.  It's there to keep dogs from jumping over (they've attempted it and it's a long way down) when the weather is pleasant enough to enjoy being out there.

Anyway, Pax brought us lots and lots of snow and we were pretty much house-bound for four days; the event called for a bit of comfort food.

Enter a big pot of moist, italian meatballs...













Recipe:

1 pound of ground meat (a blend of beef and pork is wonderful, but this time I only had beef
               and that's completely okay)
1/4 cup parmesan cheese
1/4 cup bread crumbs (or 1-2 slices of bread, crumbled)
1/4 cup milk
1 large egg
1 tsp onion powder
1 tsp dried oregano
1 Tbsp fresh parsley (or 1 tsp dried)
1/2 tsp sea salt
1/4 tsp pepper
1 quart of your favorite tomato sauce

For optimal nutrition, get the best ingredients available to you, i.e. grass-fed, pastured and organic.

Blend all ingredients (excluding the tomato sauce!) with your hands and form into balls - whatever size you like.  I like golfball-size and this recipe makes 20 of them.  Place in a hot skillet to brown and then finish cooking in your favorite tomato sauce.  (Let them simmer in the sauce for about 45 minutes.)

Serve them with pasta; or by themselves with just a side salad; or do like we did and make meatball sandwiches.

To make sandwiches, slice sandwich steak rolls lengthwise; butter both sides and place in a 350-degree oven for 3-5 minutes to melt butter and slightly toast the bread.  Spoon 4 meatballs onto each roll (more or less depending on the length of your roll), add a spoonful or two of sauce, sprinkle with shredded mozzarella cheese, and place under the broiler for a minute or two to melt the cheese.
