A Quiet Saturday

It was a beautifully sunny day today.  I meandered the yard a few times to see what new Springy thing had sprung.

These I took in the evening while dinner cooked.

(When last year's fern faded and the pot was put in the garage for the winter, it was forgotten about.  This hasn't seen daylight or had a drop of water for almost 6 months.  When I went to pull my pots out today, this fern had already grown 8 inches!)

Later in the afternoon Kristiina, Nic and the kids came over.  Nic was helping us out with some car repairs since Joe has been working so much.  So, he came to finish it up.

"The boys" (Joe, Nic and Kingston) were outside doing the car when Joe said to Kingston (who always wants to help with everything), "Are you a mechanic?"  Kingston said, "No, I'm a meKingston."  Ha!  He's so funny.

His language and reasoning skills continue to astound me.  He's barely more than 2 years old and he's speaking full sentences with some pretty advanced thought processes..

Back inside, he helped me cook... that's something he does now EVERY time he comes over.  Only, I wasn't cooking anything yet, but he made a phenomenal salt and pepper water concoction! {wink}

Aria... she's just a little beauty and growing so fast.  I love how quick she is with a smile... and what a little jabber mouth.

They went home around 7:00 and we had a late dinner.  I made Mom O'Brien's Chicken Parisienne recipe. We both really enjoy it.  Simple and oh, so tasty.  Here's the recipe:


2-4 chicken breasts
salt/pepper to taste
2 TBSP butter
 1-2 TBSP olive oil
1 sm onion sliced
1 c sour cream
1 c sliced mushrooms
1 can cream mushroom soup or cream chicken soup
1/2- 3/4 c wine or none (I use it, Mom does not)

Pre-heat oven 400 degrees; Season breasts and brown on both sides in butter & oil; then arrange chicken, onions, & mushrooms in baking dish; mix remaining ingredients in a separate bowl and pour over chicken, Bake 40-50 minutes with love 

We usually have it with rice or pasta.

Mmmm, we love comfort food so much more than we do healthy food... You'd never know it from the recipes I post here, but we really do eat the healthy stuff, too.  Serve this one with a salad.
