Scramble some eggs, dice some ham, throw in a spinach leaf or two for good [nutritional] measure, and whatever kind of cheese you have available.
Pile it all up on a few tortillas...
Roll it up - wrap it in saran wrap, label it (because if you're like me, you used up assorted cheeses), and call it breakfast on the go!
When you're ready to have it, just unwrap, slice it in half and microwave it for about two minutes. When warmed, mine ended up kind of watery (as in sitting in a puddle of water on the plate... pour that off) - I think because of the ham. Next time I'll try browned sausage.
I like to have mine with a bit of salsa or Greek yogurt.

Great idea!! This type of convenient I like...not the store bought in a box variety which is not healthy!

It would be easy to cook a batch of these up and pop them into the freezer when expecting out-of-town company too. Homemade food for entertaining without taking away from visiting time - LOVE IT! Why are you useing the microwave so much when it changes your food from good for you to harmful? I through my microwave out the door and I am not really missing it.I likegood health food.

ReplyDeleteMany of the recipes posted are pre-enlightenment to real food and the realities of the standard American diet. While I haven't put the microwave out to the curb yet, I use it far less than I used to.
